For the Crust

  • 1.5 cups all-purpose flour
  • 0.5 cups powdered sugar
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 2 tablespoons ice water

For the Filling

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon grated lemon zest
  • 1 tablespoon grated lime zest
  • 0.5 cups fresh lemon juice
  • 0.5 cups fresh lime juice
  • 1 teaspoon vanilla extract
  • 0.25 cups all-purpose flour

Instructions
 

  • Prepare the crust by mixing flour, powdered sugar, and salt. Add chilled butter and mix until coarse crumbs form. Stir in egg yolk and ice water, then press into a tart pan and prick the bottom.
  • Make the filling by whisking together sugar and eggs, then adding lemon and lime zest, juices, vanilla, and flour. Mix until smooth.
  • Bake the crust until golden, then pour in the filling and bake until set and slightly puffed.
  • Cool the tart to room temperature, then refrigerate for at least 2 hours before serving.
