Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1/4 cup gin
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare four mini loaf pans by greasing them.
  • In a medium bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  • In a large mixing bowl, cream together the butter and brown sugar until light and fluffy, about 3-4 minutes. Add molasses and gin, mix well. Beat in eggs, buttermilk, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Fold in the warm spiced gin into the batter.
  • Divide the batter evenly among the prepared mini loaf pans, filling each about two-thirds full.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaves cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
