Dry Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
Wet Ingredients
- 1 large egg
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, melted
- vegetable oil for frying

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, ground cinnamon, and nutmeg until well combined.
In a separate bowl, beat the egg, then add the whole milk, vanilla extract, and melted butter. Mix until smooth and creamy.
Pour the wet mixture into the dry ingredients and stir gently until just combined, being careful not to overmix.
Lightly flour a clean surface and knead the dough gently for about 1-2 minutes.
Shape the dough into a ball and place it in a lightly greased bowl. Cover and let it rise in a warm place for 30.
Roll out the dough to about 1/2 inch thick and cut into squares or rectangles, about 2 inches wide.
Heat about 2 inches of vegetable oil to 350°F. Fry the beignets for 2-3 minutes on each side until golden brown.
Dust the warm beignets generously with powdered sugar before serving.
