Butter Beans

  • 1 can butter beans, drained and rinsed 15 ounces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 1 can diced tomatoes, undrained 14.5 ounces
  • 1/4 cup vegetable broth
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions
 

  • Drain and rinse the butter beans. Dice the onion and mince the garlic.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  • Stir in the minced garlic, oregano, thyme, and red pepper flakes. Cook for an additional 1-2 minutes until fragrant.
  • Add the drained butter beans and diced tomatoes to the skillet. Pour in the vegetable broth and stir to combine. Season with salt and pepper to taste.
  • Bring the mixture to a gentle simmer and cook for 10-15 minutes.
  • Garnish with fresh basil leaves and sprinkle with grated Parmesan cheese before serving.
