Crust
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for the crust)
Filling
- 4 packages (8-ounce) cream cheese, softened
- 1 cup granulated sugar (for the filling)
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- 1 cup caramel sauce
- 1 cup chopped pecans
Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into a 9-inch springform pan and bake at 325°F for 10 minutes. Let cool.
Make the cheesecake filling by beating cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, then stir in sour cream.
Assemble the cheesecake by pouring half of the filling over the crust, adding half of the chocolate chips, caramel, and pecans. Repeat with remaining filling and toppings.
Bake the cheesecake for 55-60 minutes until edges are set and center is slightly jiggly. Cool in the oven for 1 hour.
Refrigerate the cheesecake for at least 4 hours before serving. Drizzle with caramel and sprinkle with pecans before serving.
