Ingredients
  

Crust

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar (for the crust)

Filling

  • 4 packages (8-ounce) cream cheese, softened
  • 1 cup granulated sugar (for the filling)
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 1 cup caramel sauce
  • 1 cup chopped pecans

Instructions
 

  • Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar. Press into a 9-inch springform pan and bake at 325°F for 10 minutes. Let cool.
  • Make the cheesecake filling by beating cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, then stir in sour cream.
  • Assemble the cheesecake by pouring half of the filling over the crust, adding half of the chocolate chips, caramel, and pecans. Repeat with remaining filling and toppings.
  • Bake the cheesecake for 55-60 minutes until edges are set and center is slightly jiggly. Cool in the oven for 1 hour.
  • Refrigerate the cheesecake for at least 4 hours before serving. Drizzle with caramel and sprinkle with pecans before serving.
