Pasta
- 8 ounces spaghetti or your favorite pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Prepare your ingredients by measuring out the pasta, olive oil, and spices. Mince the garlic and chop the basil.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water, then drain the pasta.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute. Stir in the diced tomatoes, oregano, salt, black pepper, and red pepper flakes. Simmer for 5-7 minutes.
Add the drained pasta to the skillet and toss to combine. If the mixture is too dry, add reserved pasta water until desired consistency. Stir in fresh basil and Parmesan cheese before serving.
