Mascarpone Cheese
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 0.5 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso, cooled
- 1 tablespoon coffee liqueur (optional)
- 1.5 cups chocolate cookie crumbs
- 8 ounces semi-sweet chocolate, chopped
- cocoa powder, for dusting
Brew a fresh cup of espresso and allow it to cool completely. Mix the cooled espresso with coffee liqueur, if using, and set aside.
In a large mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Beat on medium speed until soft peaks form, about 3 to 5.
Dip chocolate cookie crumbs into the coffee mixture for a few seconds, then fold them into the mascarpone mixture gently.
Cover the bowl with plastic wrap and chill the mixture in the refrigerator for 30.
Scoop out bite-sized portions of the chilled mixture and roll them into balls. Place on a parchment-lined baking sheet.
Melt the chopped semi-sweet chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip each truffle into the chocolate, allowing excess to drip off, then dust with cocoa powder and refrigerate for at least 60.
