Ingredients
  

Quinoa and Vegetables

  • 1 cup quinoa Rinsed to remove any bitterness.
  • 2 cups water For cooking the quinoa.
  • 1 cup red bell pepper Diced for a sweet crunch.
  • 1 cup cucumber Diced for a refreshing bite.
  • 1 cup shredded carrots Adds color and sweetness.
  • 1 cup green onions Sliced for a mild onion flavor.
  • 1/2 cup chopped fresh cilantro For a burst of herbal freshness.
  • 1/4 cup chopped peanuts Or cashews for a nutty crunch.
  • 1/4 cup sesame seeds For added texture and flavor.

Dressing

  • 1/4 cup soy sauce Provides a savory base.
  • 2 tablespoons lime juice Adds a zesty kick.
  • 2 tablespoons honey or maple syrup For a touch of sweetness.
  • 1 tablespoon sesame oil Enhances the nutty flavor.
  • 1 teaspoon grated fresh ginger For a hint of spice.
  • 1 clove garlic Minced for depth of flavor.

Instructions
 

  • Cook the quinoa by combining rinsed quinoa and water in a medium saucepan. Bring to a boil, then reduce heat to low and simmer for 15 minutes. Remove from heat and let cool.
  • Prepare the vegetables by dicing the red bell pepper and cucumber, shredding the carrots, slicing the green onions, and chopping the cilantro.
  • Make the dressing by whisking together soy sauce, lime juice, honey or maple syrup, sesame oil, grated ginger, and minced garlic in a small bowl.
  • Combine the cooked quinoa, diced vegetables, peanuts, and sesame seeds in a large bowl. Pour the dressing over and toss gently to coat.
  • Let the salad sit for at least 15 minutes before serving to allow flavors to develop. Serve chilled or at room temperature.

Notes

This salad can be made ahead of time and stored in the fridge. The flavors improve as they meld together.
