Instructions
 

  • Preheat your oven to 375°F. In a skillet, heat oil over medium heat, add ground beef, and cook until browned (5-7 minutes). Add chopped onion and minced garlic, cooking until onion is translucent.
  • Add black beans, diced tomatoes, chili powder, cumin, salt, and black pepper to the skillet. Stir and let simmer for 5 minutes.
  • Grease a baking dish, spread the beef mixture evenly, and whisk together cornmeal, milk, egg, and baking powder. Pour over the beef mixture and sprinkle with cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes until golden brown. Let cool for 5-10 minutes before serving.
