- 1 pound boneless, skinless chicken thighs Cut into 1-inch pieces
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 green onion, chopped For garnish

Whisk together soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, and sesame oil in a bowl to create the marinade. Add chicken pieces and coat well. Cover and refrigerate for at least 30 minutes.
Soak wooden skewers in water for 30 minutes if using. Thread marinated chicken onto skewers, leaving space between pieces.
Preheat grill to medium-high heat. Grill skewers for 5-7 minutes on each side, basting with thickened marinade during the last few minutes. Remove from grill and let rest before serving.
