Base Ingredients
- 1 cup uncooked white rice
- 1 pound ground beef (or turkey)
- 1 tablespoon taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- Salt and pepper to taste
- 1 tablespoon olive oil
Cook the rice by adding 1 cup of uncooked white rice and 2 cups of water to a medium saucepan. Bring to a boil, then reduce heat and simmer for 15-20 minutes. Let sit for 5 minutes before fluffing with a fork.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef or turkey and cook for 5-7 minutes until browned. Drain excess fat, then add taco seasoning, black beans, corn, and diced tomatoes. Cook for an additional 5 minutes.
Assemble the Taco Rice Bowl by starting with a base of rice, then adding the taco meat mixture, followed by shredded lettuce, cheddar cheese, diced avocado, sour cream, and salsa.
