Ingredients
  

Sweet Potatoes

  • 2 pounds sweet potatoes Peeled and cubed
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar Packed
  • 1/2 cup milk Whole or almond milk
  • 1/4 cup unsalted butter Melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows For topping

Instructions
 

  • Peel and cube the sweet potatoes, then boil them in a large pot of water until tender, about 15-20 minutes. Drain and let cool slightly.
  • Mash the sweet potatoes in a large mixing bowl, then stir in granulated sugar, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  • Pour the sweet potato mixture into a greased 9x13-inch baking dish and spread evenly.
  • Preheat the oven to 350°F. Bake the casserole for 25 minutes, then sprinkle mini marshmallows on top and bake for an additional 10-15 minutes until golden brown.
  • Let the casserole cool for a few minutes before serving.
