Sweet Potatoes
- 2 pounds sweet potatoes Peeled and cubed
- 1/2 cup granulated sugar
- 1/2 cup brown sugar Packed
- 1/2 cup milk Whole or almond milk
- 1/4 cup unsalted butter Melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 cups mini marshmallows For topping
Peel and cube the sweet potatoes, then boil them in a large pot of water until tender, about 15-20 minutes. Drain and let cool slightly.
Mash the sweet potatoes in a large mixing bowl, then stir in granulated sugar, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
Pour the sweet potato mixture into a greased 9x13-inch baking dish and spread evenly.
Preheat the oven to 350°F. Bake the casserole for 25 minutes, then sprinkle mini marshmallows on top and bake for an additional 10-15 minutes until golden brown.
