  • 1 cup cornmeal

  • 1/4 cup unsalted butter, melted
  • 2 large eggs binding agent
  • 1 teaspoon baking powder helps the casserole rise
  • 1 teaspoon salt enhances flavors
  • 1/2 teaspoon black pepper adds a hint of spice
  • 1 cup shredded cheddar cheese (optional) adds creaminess and savory flavor

Instructions
 

  • Prep your ingredients by shucking corn if fresh, or thawing frozen corn. Measure out all ingredients.
  • In a large mixing bowl, combine corn kernels, sour cream, cornmeal, honey, milk, melted butter, eggs, baking powder, salt, and black pepper. Mix until smooth.
  • If using cheese, fold it into the mixture. Pour into a baking dish and spread evenly.
  • Bake in a preheated oven at 350°F for 30-35 minutes until golden brown. Let cool for 10 minutes before serving.

Notes

Let the casserole cool for about 10 minutes after baking to set properly.
