Ingredients
  

Tart Crust

  • 1.5 cups all-purpose flour
  • 0.5 cups powdered sugar
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water

Pistachio Cream Filling

  • 1 cup shelled pistachios, finely ground
  • 0.5 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 0.5 cups heavy cream
  • 1 teaspoon almond extract

Strawberry Topping

  • 2 cups fresh strawberries, sliced
  • 2 tablespoons apricot jam
  • 1 tablespoon water

Instructions
 

  • Combine flour, powdered sugar, and salt in a bowl. Add butter and mix until coarse crumbs form. Stir in egg yolk and cold water until dough forms. Press into tart pan and chill for 30 minutes.
  • Mix ground pistachios, sugar, and vanilla in a bowl. Add eggs, cream, and almond extract. Blend until smooth.
  • Preheat oven to 350°F. Bake crust for 15-20 minutes until golden. Pour filling into crust and bake for 25-30 minutes until set.
  • Cool tart completely. Arrange strawberries on top. Heat apricot jam and water, then brush over strawberries.
