Tart Crust
- 1.5 cups all-purpose flour
- 0.5 cups powdered sugar
- 0.5 teaspoon salt
- 0.5 cups unsalted butter, chilled and cubed
- 1 large egg yolk
- 2 tablespoons cold water
Pistachio Cream Filling
- 1 cup shelled pistachios, finely ground
- 0.5 cups granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 0.5 cups heavy cream
- 1 teaspoon almond extract
Strawberry Topping
- 2 cups fresh strawberries, sliced
- 2 tablespoons apricot jam
- 1 tablespoon water
Combine flour, powdered sugar, and salt in a bowl. Add butter and mix until coarse crumbs form. Stir in egg yolk and cold water until dough forms. Press into tart pan and chill for 30 minutes.
Mix ground pistachios, sugar, and vanilla in a bowl. Add eggs, cream, and almond extract. Blend until smooth.
Preheat oven to 350°F. Bake crust for 15-20 minutes until golden. Pour filling into crust and bake for 25-30 minutes until set.
Cool tart completely. Arrange strawberries on top. Heat apricot jam and water, then brush over strawberries.
