Strawberry Cheesecake Cinnabon Rolls

Sweet rolls filled with a cream cheese, strawberry, and cinnamon mixture, topped with a vanilla glaze.

Ingredients
  

  • Dough
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet 2 1/4 teaspoons active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup milk warmed to 110°F
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Filling
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1/4 cup fresh strawberries diced
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • In a large mixing bowl, combine the flour, granulated sugar, yeast, and salt.
  • In a separate bowl, mix the warmed milk, melted butter, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  • Knead the dough on a floured surface for about 5 minutes until smooth.
  • Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
  • While the dough is rising, prepare the filling by mixing the softened cream cheese, powdered sugar, diced strawberries, vanilla extract, and cinnamon in a bowl until smooth.
  • Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle about 1/4 inch thick.
  • Spread the cream cheese filling evenly over the dough.
  • Starting from one long side, roll the dough tightly into a log.
  • Cut the log into 12 equal pieces and place them in a greased baking dish.
  • Cover the rolls with a kitchen towel and let them rise for another 30 minutes.
  • Preheat the oven to 350°F.
  • Bake the rolls for 20-25 minutes or until golden brown.
  • While the rolls are baking, prepare the icing by whisking together the powdered sugar, milk, and vanilla extract until smooth.
  • Once the rolls are done, let them cool for a few minutes before drizzling the icing over the top.
  • Serve warm.

Notes

Substitute half of the cream cheese with mascarpone cheese for a richer flavor. For a cheesecake crust effect, sprinkle crushed graham crackers on top of the filling before rolling.
