Chicken

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Prepare the chicken breasts by rinsing them under cold water and patting them dry. Slice each chicken breast horizontally to create a pocket.
  • In a medium bowl, combine chopped spinach, shredded mozzarella cheese, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  • Stuff the chicken breasts with the spinach and mozzarella filling. Rub the outside of the chicken with olive oil.
  • Preheat the oven to 375°F. Place the stuffed chicken in a baking dish, sprinkle with Italian seasoning and grated Parmesan cheese. Bake for 25-30 minutes until the internal temperature reaches 165°F.
  • Let the chicken rest for 5 minutes before serving.
