Ingredients
  

Chicken

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Preheat your oven and prepare the chicken breasts by rinsing, drying, and cutting a pocket into each.
  • In a medium bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  • Stuff each chicken breast pocket with the filling and secure with toothpicks if necessary.
  • Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F. Let rest for 5 minutes before serving.
