- 2 large boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Preheat your oven and prepare the chicken breasts by rinsing, drying, and cutting a pocket into each.
In a medium bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
Stuff each chicken breast pocket with the filling and secure with toothpicks if necessary.
Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown.
Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F. Let rest for 5 minutes before serving.
