Lentils

  • 1 cup dry green or brown lentils rinsed and drained
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 medium bell pepper diced (any color)
  • 1 medium carrot diced
  • 1 can (14.5 ounces) diced tomatoes undrained
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional, for extra heat
  • 1/4 cup fresh cilantro chopped (for garnish)
  • 1 lime juice of 1 lime

Instructions
 

  • Rinse the dry lentils under cold water and drain well. Set aside.
  • Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
  • Stir in minced garlic, diced bell pepper, and carrot. Cook for an additional 3-4 minutes until softened.
  • Add rinsed lentils, undrained diced tomatoes, vegetable broth, chili powder, cumin, smoked paprika, salt, black pepper, and cayenne pepper. Stir well.
  • Bring to a boil over high heat, then reduce heat to low, cover, and let simmer for 25-30 minutes until lentils are tender.
  • Stir in fresh lime juice and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro.
