Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice with 2 1/2 cups of water in a rice cooker or pot. If using a pot, bring to a boil, then reduce heat and let simmer for 20 minutes. Remove from heat and let sit covered for 10 minutes.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the fresh salmon fillet and cook for 4-5 minutes on each side until fully cooked. Remove and flake with a fork. In a mixing bowl, combine flaked salmon with soy sauce, sriracha, sesame oil, and mayonnaise. Mix until creamy and evenly combined.
Fold the rice vinegar, sugar, and salt mixture into the cooked sushi rice. Spread the seasoned rice evenly in a greased 9x13 inch baking dish. Spread the spicy salmon mixture evenly over the rice layer.
Preheat your oven to 375°F (190°C). Bake the dish for 15-20 minutes until heated through and slightly golden on top. Let cool for a few minutes before garnishing and serving.
