Instructions
 

  • Gather all your ingredients to make the cooking process smoother.
  • Heat olive oil in a large pot over medium heat. Add sliced andouille sausage and diced chicken. Cook for 5-7 minutes until browned, then set aside.
  • In the same pot, add chopped onion, bell pepper, celery, and minced garlic. Sauté for 5 minutes until soft.
  • Stir in undrained diced tomatoes, long-grain white rice, chicken broth, Cajun seasoning, dried thyme, bay leaf, salt, and pepper. Bring to a boil.
  • Return browned sausage and chicken to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes.
  • Remove bay leaf, fluff jambalaya with a fork, and garnish with sliced green onions before serving.

Notes

Let the jambalaya rest for a few minutes after cooking to allow flavors to meld.
