Prepare your ingredients by peeling and dicing the potatoes, chopping the onion, mincing the garlic, and grating the ginger.
In a large skillet, heat the vegetable oil over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.
Add the chopped onion and cook for about 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute.
Add the ground meat, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.
Add the diced potatoes and stir to coat them with the meat and spices.
Season with coriander powder, garam masala, turmeric, red chili powder, and salt. Mix well.
Add the diced tomatoes and water, bring to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes until potatoes are tender.
Stir in the chopped cilantro before serving.
