Base Ingredients
- 1 cup long-grain white rice rinsed
- 2 cups chicken broth
- 1 tablespoon vegetable oil
- 1 pound ground beef or pork
- 1 small onion, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup green onions, chopped (for garnish)
Rinse the long-grain white rice under cold water until the water runs clear. Combine the rinsed rice with chicken broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes. Remove from heat and let sit covered for 5 minutes.
Heat vegetable oil in a large skillet over medium heat. Add ground beef or pork and cook for 5-7 minutes, breaking it apart as it browns. Drain excess fat if necessary.
Add diced onion, bell pepper, celery, and minced garlic to the skillet. Cook for another 5-7 minutes until vegetables soften.
Stir in Cajun seasoning, black pepper, salt, and cayenne pepper. Cook for an additional 2 minutes to meld flavors.
Fluff the cooked rice with a fork and add it to the skillet. Stir well to combine and heat through for 2-3 minutes. Serve hot, garnished with chopped green onions.
