Fresh Peaches

  • 2 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar divided into two parts
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions
 

  • Prepare the peaches by washing, peeling, and slicing them into thin wedges. Combine with 1/2 cup sugar and lemon juice, and let sit for 10 minutes.
  • In a separate bowl, mix flour, remaining sugar, baking powder, and salt. Gradually add milk, melted butter, and vanilla, stirring until just combined.
  • Pour the batter into a greased 9x13-inch baking dish. Spoon the marinated peaches and their juices over the batter, then sprinkle with cinnamon.
  • Bake in a preheated oven at 350°F for 40-45 minutes until golden brown. Let cool for 10 minutes before serving.
