Ingredients
  

Sweet Potatoes

  • 3 large sweet potatoes peeled and cubed
  • 1/2 cup maple syrup
  • 1/4 cup unsalted butter melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows optional
  • 1/2 cup chopped pecans optional

Instructions
 

  • Peel and cube the sweet potatoes, then boil in a large pot of water for 15-20 minutes until tender. Drain and let cool slightly.
  • Mash the sweet potatoes in a large mixing bowl until smooth. Add maple syrup, melted butter, milk, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until well combined.
  • Pour the sweet potato mixture into a greased 2-quart baking dish. If using, sprinkle mini marshmallows and chopped pecans on top.
  • Preheat the oven to 350°F (175°C) and bake the casserole for 25-30 minutes until heated through and marshmallows are golden brown.

Notes

For a creamier texture, substitute half of the milk with heavy cream. Adjust toppings based on preference.
