Base Ingredients
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon vegetable oil
- 1 medium onion, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 pound ground beef or pork
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup green onions, sliced (for garnish)
- 1/2 cup fresh parsley, chopped (for garnish)
In a medium saucepan, combine 1 cup of long-grain white rice with 2 cups of chicken broth. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 18-20 minutes. Remove from heat and let sit covered for 5 minutes.
Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add 1 pound of ground beef or pork and cook for 5-7 minutes, breaking apart as it browns. Drain excess fat if necessary.
Add 1 medium diced onion, 1 diced green bell pepper, and 2 diced celery stalks to the skillet. Sauté for 5 minutes until softened. Add 3 cloves of minced garlic and cook for 1 more minute. Stir in 1 tablespoon of Cajun seasoning, 1 teaspoon of dried thyme, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Cook for another 2-3 minutes.
Add the cooked rice to the skillet and mix until well combined. Cook for an additional 2-3 minutes over medium heat.
Let the Southern Dirty Rice simmer for a few minutes, then garnish with 1/2 cup of sliced green onions and 1/2 cup of chopped fresh parsley before serving.
