Chicken
- 4 pieces bone-in, skin-on chicken thighs about 1.5 pounds
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water optional for thickening
- Fresh parsley, chopped for garnish
Rinse the chicken thighs under cold water and pat them dry with paper towels. Season the chicken generously with salt, black pepper, garlic powder, and onion powder.
In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove the chicken and set aside.
In the same skillet, add the sliced onion and sauté for 3-4 minutes until soft. Add minced garlic and cook for an additional minute. Pour in chicken broth and heavy cream, then stir in thyme, paprika, and Worcestershire sauce.
Return the seared chicken thighs to the skillet, skin-side up. Bring to a gentle simmer, reduce heat to low, cover, and cook for 25-30 minutes until chicken is tender and reaches an internal temperature of 165°F.
If desired, add the cornstarch mixture to thicken the gravy and cook for an additional 2-3 minutes. Garnish with freshly chopped parsley before serving.
