Chicken

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup pitted green olives, sliced
  • 1/4 cup capers, rinsed and drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

  • Season the chicken thighs with salt and black pepper. Heat olive oil in a skillet over medium-high heat and cook chicken skin-side down for 5-7 minutes until golden brown. Flip and cook for another 5 minutes. Remove and set aside.
  • In the same skillet, sauté diced onion for 3-4 minutes until soft. Add minced garlic and cook for 1 minute.
  • Stir in diced tomatoes, olives, and capers. Add oregano, basil, and red pepper flakes. Simmer to meld flavors.
  • Return chicken to the skillet skin-side up, cover, and reduce heat to low. Cook for 25-30 minutes until chicken reaches 165°F.
  • Let the dish rest for a few minutes before serving. Garnish with fresh parsley.
