Ingredients
  

Puff Pastry

  • 8 ounces puff pastry thawed for easy handling
  • 1 tablespoon olive oil adds richness to the filling
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 8 ounces mushrooms sliced, cremini or button
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • 1 teaspoon salt to season the filling
  • ½ teaspoon black pepper for a hint of spice
  • 1 cup Gruyère cheese shredded
  • 1 egg beaten for egg wash

Instructions
 

  • Heat olive oil in a skillet over medium heat. Sauté chopped onion for 3-4 minutes until translucent. Add minced garlic and sliced mushrooms, cooking for 5-7 minutes until tender. Stir in thyme, salt, and pepper, then remove from heat and let cool.
  • Roll out puff pastry into a rectangle (12x16 inches) on a floured surface. Transfer to a parchment-lined baking sheet. Make diagonal cuts along the sides, leaving the center third uncut.
  • Spread the cooled mushroom mixture down the center of the uncut pastry. Sprinkle shredded Gruyère cheese over the filling. Fold cut sides over the filling to create a braid, pinching the ends to seal.
  • Brush the top of the braid with beaten egg. Bake in a preheated oven at 400°F for 25-30 minutes until golden brown. Let cool for a few minutes before slicing.
