Ground Beef Filling

  • 1 pound ground beef Main protein source.
  • 1 medium onion, finely chopped Adds sweetness and depth.

  • 1 teaspoon paprika Adds smokiness and color.

  • 1/2 teaspoon black pepper Adds heat and complexity.
  • 1/2 cup green olives, chopped Provides briny contrast.
  • 1/2 cup raisins (optional) Adds sweetness.
  • 1 package (14 ounces) refrigerated pie crusts (2 crusts) Makes empanadas easy to prepare.
  • 1 egg beaten (for egg wash) Gives a golden finish.

Instructions
 

  • Prepare the dough by letting refrigerated pie crusts sit at room temperature for 10 minutes or make your own dough and chill for 30 minutes.
  • In a skillet, heat oil over medium heat, add ground beef and cook until browned (5-7 minutes). Drain fat, add onion and garlic, and cook until translucent (3-4 minutes). Stir in spices and olives, then cool the filling.
  • Roll out pie crusts, cut into circles, place filling in the center, fold and seal the edges.
  • Preheat oven to 400°F, place empanadas on a baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
