Savory Beef Filling

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas and carrots
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 package (14 ounces) refrigerated pie crusts (2 crusts)
  • 1 egg beaten (for egg wash)

Instructions
 

  • Prepare the dough by letting refrigerated pie crusts sit for 10 minutes or make your own dough and chill for 30 minutes.
  • Heat olive oil in a skillet, sauté onion for 5 minutes, add garlic and cook for 1 minute, then add ground beef and cook until browned for 6-8 minutes.
  • Mix in cumin, smoked paprika, salt, black pepper, peas, and carrots, cooking for an additional 3-4 minutes.
  • Roll out pie crusts, cut into circles, fill with 2 tablespoons of beef mixture, fold and seal edges.
  • Preheat oven to 400°F, place empanadas on a baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
