Savory Beef Filling
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup frozen peas and carrots
- 1 tablespoon fresh parsley, chopped (optional)
- 1 package (14 ounces) refrigerated pie crusts (2 crusts)
- 1 egg beaten (for egg wash)
Prepare the dough by letting refrigerated pie crusts sit for 10 minutes or make your own dough and chill for 30 minutes.
Heat olive oil in a skillet, sauté onion for 5 minutes, add garlic and cook for 1 minute, then add ground beef and cook until browned for 6-8 minutes.
Mix in cumin, smoked paprika, salt, black pepper, peas, and carrots, cooking for an additional 3-4 minutes.
Roll out pie crusts, cut into circles, fill with 2 tablespoons of beef mixture, fold and seal edges.
Preheat oven to 400°F, place empanadas on a baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
