Sausage Filling

  • 1 cup breakfast sausage, cooked and crumbled
  • 8 slices bread (white or whole wheat)
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 cup butter, for cooking
  • Maple syrup, for serving

Instructions
 

  • Flatten each slice of bread using a rolling pin until about half its original thickness.
  • Crumble the cooked breakfast sausage into small pieces.
  • Place about 1 tablespoon of crumbled sausage in the center of each flattened slice of bread and roll tightly.
  • Whisk together eggs, milk, vanilla extract, and ground cinnamon in a shallow bowl.
  • Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each roll-up in the egg mixture and place seam-side down in the skillet.
  • Cook for 2-3 minutes on each side until golden brown, then roll in a mixture of granulated sugar and cinnamon before serving with maple syrup.
