Sausage Filling
- 1 cup breakfast sausage, cooked and crumbled
- 8 slices bread (white or whole wheat)
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/4 cup butter, for cooking
- Maple syrup, for serving
Flatten each slice of bread using a rolling pin until about half its original thickness.
Crumble the cooked breakfast sausage into small pieces.
Place about 1 tablespoon of crumbled sausage in the center of each flattened slice of bread and roll tightly.
Whisk together eggs, milk, vanilla extract, and ground cinnamon in a shallow bowl.
Heat a skillet over medium heat and melt 1 tablespoon of butter. Dip each roll-up in the egg mixture and place seam-side down in the skillet.
