Instructions
Preheat oven to 300°F (150°C) and line baking sheets with parchment paper. Sift together powdered sugar and almond flour.
Beat egg whites and cream of tartar until foamy, gradually add granulated sugar, and beat until stiff peaks form (5-7 minutes).
Fold in vanilla extract and red food coloring, then gently fold in almond flour mixture in three additions.
Pipe small circles (1.5 inches) on baking sheets, tap to release air bubbles, and let sit for 30-60 minutes until a skin forms.
Bake for 15-20 minutes until firm. Allow to cool completely on baking sheets.
Prepare buttercream frosting and transfer to a piping bag.
Assemble macarons by piping buttercream on half of the shells and sandwiching with the other half.
Notes
Use aged egg whites for better results. Ensure all utensils are clean and dry.
