Ingredients
  

Chickpeas

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup roasted red peppers, chopped can use jarred or homemade
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Water as needed for consistency

Instructions
 

  • Gather your ingredients: chickpeas, roasted red peppers, tahini, olive oil, lemon juice, garlic, cumin, salt, and pepper.
  • Prepare the roasted red peppers by draining and chopping if using jarred, or roasting fresh peppers until charred and peeling them.
  • In a food processor, combine chickpeas, roasted red peppers, tahini, olive oil, lemon juice, garlic, and cumin. Blend until smooth and creamy.
  • Adjust the consistency by adding water a tablespoon at a time until desired texture is reached. Taste and adjust seasoning as needed.
  • Transfer to a serving bowl and drizzle with olive oil before serving.
