Chickpeas
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup roasted red peppers, chopped can use jarred or homemade
- 1/4 cup tahini
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Water as needed for consistency
Gather your ingredients: chickpeas, roasted red peppers, tahini, olive oil, lemon juice, garlic, cumin, salt, and pepper.
Prepare the roasted red peppers by draining and chopping if using jarred, or roasting fresh peppers until charred and peeling them.
In a food processor, combine chickpeas, roasted red peppers, tahini, olive oil, lemon juice, garlic, and cumin. Blend until smooth and creamy.
Adjust the consistency by adding water a tablespoon at a time until desired texture is reached. Taste and adjust seasoning as needed.
Transfer to a serving bowl and drizzle with olive oil before serving.
