Instructions
 

  • Prepare the poblano peppers by roasting them under a broiler or on a grill until the skin is charred, about 10-15 minutes. Let them steam for 10 minutes, then peel, remove seeds, and chop.
  • Heat olive oil in a large pot over medium heat. Sauté diced onion for 5 minutes until translucent, then add minced garlic and cook for another minute.
  • Add the roasted poblano peppers to the pot and cook for 2 minutes. Pour in vegetable broth and bring to a boil, then reduce heat and simmer for 15 minutes.
  • Blend the soup until smooth using an immersion blender or regular blender, then return to the pot if needed.
  • Stir in heavy cream, ground cumin, salt, and pepper. Heat through for 5 minutes, then stir in lime juice and serve hot, garnished with fresh cilantro.
