Reuben Casserole Ingredients

  • 2 cups cooked corned beef, chopped This is the star of the dish, providing rich flavor and protein.
  • 1 cup sauerkraut, drained and rinsed The tangy taste of sauerkraut adds a nice contrast to the savory beef.
  • 1 cup Swiss cheese, shredded This cheese melts beautifully, creating a creamy texture.
  • 1 cup Thousand Island dressing This dressing brings everything together with its creamy and zesty flavor.
  • 1 cup rye bread, cubed The bread adds a crunchy topping that complements the soft filling.
  • 1 tablespoon butter, melted Butter helps to crisp up the bread and adds richness.
  • 1 teaspoon caraway seeds (optional) These seeds enhance the rye flavor and add a unique twist.
  • Salt and pepper to taste Seasoning is key to bringing out the flavors of the ingredients.

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the chopped corned beef, drained sauerkraut, shredded Swiss cheese, and Thousand Island dressing. Mix everything well until all the ingredients are evenly coated.
  • Grab a greased 9x13 inch baking dish. Start by layering half of the corned beef mixture at the bottom. Then, sprinkle half of the buttered rye bread cubes on top. Repeat this process with the remaining corned beef mixture and finish with the rest of the rye bread cubes on top.
  • Cover the baking dish with aluminum foil. Place it in the preheated oven and bake for 25 minutes. After that, remove the foil and bake for an additional 15-20 minutes until golden brown and crispy.
  • Let it cool for about 5-10 minutes before serving.
