Instructions
 

  • Gather all your ingredients and measure them out.
  • Wash, peel, and grate the carrots. Set aside.
  • In a food processor, blend the walnuts and dates until crumbly.
  • Add grated carrots, coconut, cinnamon, nutmeg, and salt. Blend until combined.
  • Form the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  • Chill in the refrigerator for at least 30 minutes before serving.
