Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups granulated sugar divided into two parts
  • 0.5 cups unsalted butter melted

Filling

  • 16 ounces cream cheese softened
  • 1 cup canned pumpkin puree
  • 0.75 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt

Instructions
 

  • Prepare the crust by mixing graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a 9x9-inch baking pan.
  • Make the cheesecake filling by beating cream cheese until smooth, then adding pumpkin puree, sugar, eggs, vanilla, and spices. Mix until smooth.
  • Pour the filling over the crust and spread evenly.
  • Bake in a preheated oven at 350°F for 30-35 minutes until the center is set.
  • Cool at room temperature for 1 hour, then refrigerate for at least 2 hours before cutting into squares.
