Instructions
 

  • Prepare the rice noodles according to package instructions, usually boiling for 5-7 until tender. Drain and rinse under cold water.
  • If making potstickers from scratch, combine ground meat with minced garlic, ginger, and chopped green onions. Fill dumpling wrappers and seal. Cook in a skillet until golden brown.
  • In a large skillet or wok, heat vegetable oil over medium heat. Sauté diced onion until translucent (3-4 minutes), then add garlic and ginger (1-2 minutes). Stir in carrots and bok choy, cooking until tender (3-5 minutes). Pour in chicken broth, soy sauce, and sesame oil, stirring to combine and bring to a gentle simmer.
  • Add cooked rice noodles to the skillet, tossing gently to coat in the broth. Heat through for 2-3 minutes. Season with salt and pepper to taste. Serve hot, garnished with green onions and sesame seeds.
