Cheese
- 1 cup shredded mozzarella cheese
Vegetables
- 1/2 cup diced bell peppers any color
- 1/2 cup diced onion
- 1/2 cup sliced pepperoni
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Preheat your oven to 375°F.
Dice the bell peppers and onion. Heat olive oil in a skillet and sauté the vegetables for about 5 minutes until soft.
In a bowl, whisk together the eggs, milk, garlic powder, Italian seasoning, salt, and pepper.
Add the sliced pepperoni to the skillet and cook for an additional 2 minutes. Pour the egg mixture into the skillet and cook on the stovetop for about 3-4 minutes until edges start to set.
Sprinkle mozzarella cheese on top and transfer the skillet to the oven. Bake for 15-20 minutes until puffed and set in the center.
