Ingredients
  

Eggs and Dairy

  • 8 large eggs
  • 1/2 cup milk

Cheese

  • 1 cup shredded mozzarella cheese

Vegetables

  • 1/2 cup diced bell peppers any color
  • 1/2 cup diced onion
  • 1/2 cup sliced pepperoni
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Preheat your oven to 375°F.
  • Dice the bell peppers and onion. Heat olive oil in a skillet and sauté the vegetables for about 5 minutes until soft.
  • In a bowl, whisk together the eggs, milk, garlic powder, Italian seasoning, salt, and pepper.
  • Add the sliced pepperoni to the skillet and cook for an additional 2 minutes. Pour the egg mixture into the skillet and cook on the stovetop for about 3-4 minutes until edges start to set.
  • Sprinkle mozzarella cheese on top and transfer the skillet to the oven. Bake for 15-20 minutes until puffed and set in the center.
