Prepare the pistachio cream by whipping the heavy cream until soft peaks form, then gradually add powdered sugar and whip until stiff peaks form. Fold in mascarpone cheese and vanilla extract gently.
Brew a cup of espresso and let it cool completely. Pour the cooled espresso into a shallow dish.
Dip each ladyfinger into the cooled espresso for about 2 seconds and place half of them in a 9x9 inch baking dish. Spread half of the pistachio cream mixture over the ladyfingers and sprinkle half of the chopped pistachios on top. Repeat with remaining ingredients.
Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight. Before serving, dust the top with cocoa powder and garnish with extra chopped pistachios.
