Cookie Dough
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 1 cup pistachios shelled and finely chopped
Cream Filling
- 1 cup powdered sugar
- 4 ounces cream cheese softened
- 1 teaspoon almond extract
- 2 tablespoons milk
Cream together the softened butter and granulated sugar until light and fluffy, about 2-3.
Add in the egg and vanilla extract, mixing until well combined.
