Pineapple Chicken Rice Ingredients

  • 2 cups cooked white rice
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 bell pepper, diced (red or green)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)

Instructions
 

  • Cut the boneless, skinless chicken breasts into bite-sized pieces. Heat vegetable oil in a large skillet over medium heat and add the chicken pieces. Cook for 6-8 minutes until golden brown and fully cooked.
  • Cook 2 cups of white rice according to package instructions. Fluff with a fork and set aside.
  • In the same skillet, add diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  • Stir in fresh pineapple chunks, soy sauce, brown sugar, ground ginger, black pepper, and red pepper flakes. Mix well and let cook for another 2-3 minutes.
  • Serve the pineapple chicken mixture over a bed of fluffy rice and garnish with sliced green onions.

Notes

This recipe serves four but can be easily doubled or halved. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
