- 2 cups cooked rice white or brown
- 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
- 1 cup basil pesto store-bought or homemade
- 1 cup cherry tomatoes halved
- 1 cup chicken broth
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Heat olive oil in a large pot or skillet over medium heat. Add chicken pieces, season with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes until browned and cooked through.
Add cherry tomatoes to the pot and cook for an additional 2-3 minutes until softened.
Stir in cooked rice, basil pesto, and chicken broth. Mix well and bring to a gentle simmer.
Cover and let it cook for 5 minutes to meld flavors.
Remove the lid and sprinkle mozzarella cheese on top. Cover again and let it sit for 2-3 minutes until cheese is melted.
