  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon peppermint extract
  • 1 cup powdered sugar for dusting
  • red and green food coloring optional

Instructions
 

  • Cream together the softened butter and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  • Divide the dough in half. Add peppermint extract to one half and mix. Optionally, add food coloring to create swirls.
  • Roll each half into logs, twist them together, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • Slice the chilled logs into 1/4-inch thick rounds and place on the baking sheets.
  • Bake for 10-12 minutes until edges are lightly golden. Let cool for 5 minutes before transferring to a wire rack.
  • Dust with powdered sugar before serving.
