Dough Ingredients
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2.5 cups all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 0.5 teaspoon peppermint extract
- 1 cup powdered sugar for dusting
- red and green food coloring optional
Cream together the softened butter and granulated sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
Divide the dough in half. Add peppermint extract to one half and mix. Optionally, add food coloring to create swirls.
Roll each half into logs, twist them together, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the oven to 350°F and line baking sheets with parchment paper.
Slice the chilled logs into 1/4-inch thick rounds and place on the baking sheets.
Bake for 10-12 minutes until edges are lightly golden. Let cool for 5 minutes before transferring to a wire rack.
Dust with powdered sugar before serving.
