Crust
- 1 cup all-purpose flour
- 0.5 cup unsalted butter, softened
- 0.25 cup granulated sugar
- 0.25 teaspoon salt
Filling
- 0.5 cup light corn syrup
- 0.5 cup brown sugar, packed
- 0.25 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1.5 cups pecans, chopped
Preheat the oven to 350°F. In a medium bowl, combine flour, butter, sugar, and salt. Mix until crumbly. Press into the bottom of a greased 8x8-inch baking dish. Bake for 15 minutes until lightly golden.
In a large bowl, whisk together corn syrup, brown sugar, granulated sugar, eggs, and vanilla until smooth. Stir in chopped pecans.
Pour the pecan filling over the baked crust and spread evenly. Bake for an additional 25-30 minutes until the filling is set and slightly puffed.
Allow the bars to cool in the pan for at least 30 minutes, then chill in the refrigerator for 1 hour before slicing into squares.
