Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the baking soda, salt, and granulated sugar.
  • In another bowl, mix the creamy peanut butter, egg, and vanilla extract until smooth.
  • Combine the dry and wet ingredients until you have a smooth dough.
  • Scoop out portions of the dough, roll them into balls, and place them on the baking sheet, leaving space between each.
  • Create an indentation in the center of each ball with your thumb or the back of a spoon.
  • Bake for 10-12 minutes until the edges are lightly golden, then cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chilling the dough for 30 minutes can improve texture.
