Chicken
- 2 pieces boneless, skinless chicken breasts about 1 pound total
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning

- 2 large eggs
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- to garnish fresh parsley, chopped
Prepare the chicken breasts by rinsing them under cold water and patting them dry. Pound the chicken to an even thickness.
In a medium saucepan, melt the unsalted butter over medium heat. Add the heavy cream and bring to a simmer. Stir in the shredded mozzarella cheese, black pepper, and nutmeg until smooth.
In a shallow bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. In another bowl, beat the eggs. Dip each chicken breast in the egg mixture, then coat in the Parmesan breadcrumb mixture.
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the coated chicken on the baking sheet and drizzle with olive oil. Bake for 25-30 minutes until golden brown.
