Chicken
- 2 large boneless, skinless chicken breasts about 1 pound total
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 large eggs
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- to taste Fresh parsley, chopped for garnish
Pound the chicken breasts to an even thickness of about 1 inch and pat dry with paper towels. Season with salt and pepper.
In a shallow bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well.
In another shallow bowl, whisk together eggs and Dijon mustard until smooth. Dip each chicken breast in the egg mixture, then coat with the breadcrumb mixture.
Preheat oven to 400°F. Place coated chicken on a baking sheet, drizzle with olive oil, and bake for 25-30 minutes until golden brown and cooked through.
Let the chicken rest for 5 minutes before slicing and serving.
