Ingredients
  

Chicken

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil

Instructions
 

  • Pat the chicken breasts dry with paper towels. Optionally slice them in half horizontally.
  • In a shallow bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well.
  • In another bowl, whisk together eggs and Dijon mustard. Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture, pressing to adhere.
  • Heat olive oil in a skillet over medium heat. Cook the chicken for 3-4 minutes on each side until golden brown. Transfer to a baking sheet and bake in a preheated oven at 400°F for 15-20 minutes until cooked through.
  • Let the chicken rest for 5 minutes before slicing and serving.
