Chicken
- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 cup grated Parmesan cheese
- 1 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil
Pat the chicken breasts dry with paper towels. Optionally slice them in half horizontally.
In a shallow bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix well.
In another bowl, whisk together eggs and Dijon mustard. Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture, pressing to adhere.
Heat olive oil in a skillet over medium heat. Cook the chicken for 3-4 minutes on each side until golden brown. Transfer to a baking sheet and bake in a preheated oven at 400°F for 15-20 minutes until cooked through.
Let the chicken rest for 5 minutes before slicing and serving.
