Meatloaf Ingredients
- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- 1/4 cup milk
- 1/4 cup ketchup
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup shredded mozzarella cheese (for topping)
Gather all your ingredients on a clean countertop. Chop the fresh parsley finely and mince the garlic cloves.
In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, milk, ketchup, egg, minced garlic, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Mix everything together carefully.
Transfer the mixture to a loaf pan and shape it into a loaf. Spread a thin layer of ketchup on top.
Preheat your oven to 375°F. Bake for 45-50 minutes, adding mozzarella cheese in the last 10 minutes. Let it rest for 10 minutes before slicing.
